Met and Eat

Last night’s tasting session at the Urban Farm Shop was fun.
I rushed over on my bike with panniers stuffed with trout, mackerel, chicken, duck, and pigeon. Damn! forgot the salmon. Though smoked salmon is soooo 70s and obviously the 80s are cool now. Maybe we should be doing nouvelle cuisine smoked products. I’ll speak [...]

Meet and eat

Looks like I’ll be at the Urban Farm Shop (Norfolk Street) on Wednesday doing a tasting of our smoked goods and talking to people about what we do.
It would be good to see some, sorry the reader of this blog down there showing some support.
It’s a good little shop providing great, locally sourced food.
Kick off [...]

Salt Beef

Am brining a brisket this week for my own pleasure. Will be cooking it up at the weekend, maybe with some dumplings.
If this works out well (ie. it tastes good) then I’m going to look at making pastrami at work. From limited reading, pastrami is basically hot smoked salt beef with a nice crust on [...]

From Ramsay to Bacon

Damn, no Ramsay tonight. How am I supposed to get my vicarious pleasures without watching his kitchen nightmares? Where is my hapless and incompetent ‘chef’ to provide me with entertainment as he is ritually humiliated.
I was thinking that maybe they could replace it with the same format but going into software companies instead.
‘Joel’s software nightmares’, [...]

Feast East Results

So, the Feast East show (mentioned elsewhere on this blog) was fun. Different to the last trade show I did which was DRUPA; a vast printing trade show in Dusseldorf. At that show I enthused about how JDF could enable remote proofing, whilst groups of print executives looked blankly at me, at my flat panel [...]

I’m not saying that I was a trailblazer or anything but Port of Lancaster smokehouse have started a recipe blog.
Good luck to them.

Hugh Fearnley Wearnley

I was flicking through the Observer Food Monthly mag at breakfast this morning. Actually, Saul was flicking through it. He was looking at the pictures and pointing out ones of interest. Such as, ‘bird’ and ‘moo’.
At the back was a picture of Hugh F-W planting a tree. ‘Daddy’, Saul said.
Naturally, I corrected him. No, daddy [...]

Website Wanted

We’re looking for someone to design a website for Local Flavour (the company that runs River Farm Smokery). Our existing site needs an overhaul. I posted this on cam.misc:

The main part of our business is wholesaling foods to delis, pubs, and restaurants. We need a website that will show existing or potential customers the range [...]

Feast East Show

For readers based near Cambridge (and those in Maldon), you may be interested to know that we will be at the Feast East regional food show.
It’s a chance to come and talk to us about what we do at the smokery, meet other local food producers, and spend lots of money on fantastic foods. By [...]
