Last Thursday found me in the gentrified surroundings of Tattersalls (Europes Leading Bloodstock Auctioneers). Fish and Snips

We spent an hour or so today filleting fish in preparation for the expansion of our shop and the introduction of a fresh (wet) fish counter.
We’ve all filleted fish before but having Bill, our friendly fish wholesaler, showing us how to do it properly was a real help.

Mackerel

..erm terribly nice fish. Healthy. Meaty. Fishy.
We smoke it without it’s head, hanging by its tail.
The resultant smoked mackerel looks like this and tastes wonderful.

Can’t say I was totally convinced by the idea. To be fair, I swore at Chris and made it clear to him that ew should not be smoking parmesan. Same as we don’t smoke stilton. Don’t get me started on smoked stilton.

Inspired by David Lebovitz I checked my stats and saw that NetVibes is now my number one referrer.
I’d never heard of it but it’s an Ajax homepage similar to Google’s. Looks pretty funky. I may try it out for a bit.
